ABF planning figures for packaged (take-home) beef. Treat them as minimums with no room to spare. Ask your rancher for their usual take-home pounds, then use chest lb ÷ 30 or upright lb ÷ 25.
| Share | Packaged beef (typical) | Chest freezer | Upright freezer | Footprint note |
|---|---|---|---|---|
| Beef boxes | 15–25 lb | ~1 cu ft | ~1 cu ft | Often fits a kitchen freezer shelf |
| 1/8 cow | ~55–70 lb | ~2–2.5 cu ft | ~2.5–3 cu ft | Small chest or cleared upright |
| 1/4 cow | ~110–140 lb (plan ~130) | ~4.5 cu ft | ~5.5 cu ft | ~5 cu ft chest is the common sweet spot |
| 1/2 cow | ~220–280 lb (plan ~260) | ~9 cu ft | ~11 cu ft | Garage chest recommended |
| Whole cow | ~440–560 lb (plan ~520) | ~18 cu ft | ~22 cu ft | Large chest or two freezers |
Figures align with ABF’s live freezer guide (University of Minnesota Extension sizing method). Actual yield varies by animal, finish, and your cut sheet.

| Butcher / freezer paper | Vacuum-sealed (cryovac) | |
|---|---|---|
| Peak quality window at 0°F | About 9–12+ months for steaks/roasts when wrapped tightly | About 18–24 months for many cuts when seals stay intact |
| Ground beef | Use sooner (USDA quality window often 3–4 months) | Still use ground first; vacuum helps but flavor fades sooner than steaks |
| Safety | USDA: food kept continuously frozen at 0°F stays safe indefinitely. Quality (taste/texture) is the limiting factor. | |
| Practical tip | Double-wrap or ask for a freezer-paper + plastic combo | Check seals when you unpack; re-bag anything leaking air |
Quality windows summarize common USDA Food Safety and Inspection Service freezer storage charts and processor guidance. Your ranch or butcher may wrap differently. Ask before pickup day.
No affiliate product links here on purpose. Buy whatever thermometer/alarm your hardware store carries that alarms on temperature rise or power loss.
Keep the lid or door shut. USDA guidance: a full freezer stays safe about 48 hours if unopened; a half-full freezer about 24 hours.
If the beef still has ice crystals or is 40°F or below, you can generally refreeze. When in doubt, throw it out. Chest freezers usually buy you more time than uprights.
